Salmon and mediterranean vegetables




I am always busy and never really have time to cook and make lengthy meals whatever time of day. So for me, simple, easy and healthy recipes are what I need in my life. For this dish I bought ready cut mediterranean vegetables that I could put straight into the oven along with the salmon. The salmon was cooked in foil with a drizzle of lemon juice, chilli flakes and some herbs. It took only 30 minutes to cook the whole meal and I served it with sun dried tomatoes. Delish!
