Healthy Banana Pancakes









These banana pancakes are so quick and easy to make and not only that, but I used only two ingredients with no need for measuring! So if your like me and cant get enough of pancakes, but worry about the calories involved then this is a great substitute. All I used was one ripe banana and two medium sized eggs. I mashed up the banana in a bowl, added the two eggs and whisked with a fork until a smooth consistency. I made about 6 small pancakes so I could create a tower, but it can make 2/3 large ones. The great thing about these banana pancakes is that you can add any topping you like. I love berries so topped mine with those and some maple syrup, but you can do a healthier option by using just lemon juice or just fruit and a sprinkle of low calorie sweetener. If you love sweet and savoury then top the pancakes with some grilled bacon, yum!!
